And if I recall correctly, the hold itself is also significantly larger. GatEB is 421 rooms with 265 scorable, TSS is >700 rooms with >500 scorable.

Remember that this is the main game, and it means it's a bit less difficult than the holds usually submitted to the HAs. The main hold rooms are also easier to complete/to test. There were only a couple of rooms GatEB that really had problems, so I'd say that the number of rooms are not that much of a problem as it may seem.

Most of the problems were mostly technical or content related (and obviously, that meta puzzle at the end) so I'm sure they will be able to get it out in time. (Disclaimer: This is all speculation and I'm not doing beta testing this time.)

I think the better comparison is probably to TCB rather than to GatEB. GatEB is (intentionally) significantly easier than the other main holds, probably peaking at 4 brains, while TSS is (as far as I know) in the 6-7 range like TCB, with secret rooms and optional levels that could potentially go even higher (not to the extent of something like the later levels of Perfection or anything in Beethro's Teacher, but probably still above "normal main hold" difficulty). Sure, there are probably a lot of easy rooms to introduce the new elements too, but I imagine the number of potentially problematic rooms is significantly higher than in GatEB.

This is definitely the thing I'd love to know about TSS. I mean, the update JTRH to TCB was epic with tons of new elements that, even after 7 years and lots and lots of user made holds, still hide unknown puzzle; for exemple pressure plates, hot tile, strange monster's interaction and so on.

I wonder if the new elements of TSS will have the same effect as the TCB ones and how many puzzles with old and new elements working together there are.

Beta testing is progressing well. There has been one export/import bug that has slowed down play testing recently, but besides that, very few code-related bugs have been reported so far. There are many minor details being fixed up in the TSS hold. Another set of issues centers around fine-tuning the difficulty of certain rooms, and there are a few unintended solutions being hammered out. Three weeks to go until April 1. Hmm...it's difficult to say at this point whether we can make a general release by that date. The team is trying hard, and we'll see what we can do!

There is more testing to be done in beta at this point, but most of the remaining percentage is for items like the Linux and OS X builds, a new trailer video, and news write-ups and press releases. We probably do need a few more weeks to have a solid release. Sure, I'd be happy to provide some new screenshots meanwhile.
