I want to have, say, a guard, standing in the corner. And then I want a snake to move up to him, while he's talking, and eat him. Disappear would be nice, but it doesn't have a nice little blood spatter, y'know?

I would assume that would have to be scripted separately. That would be more flexible, and the rock golem is not really recognized as a monster by game code until it is commanded to become one.
I think. I could be wrong.

Alternatively, have a character that looks like a rock golem pile.

What? Aside from the obvious appearing in places and staying still and invincible, I think a sentient pile of rocks could be... er... interesting?
