I second mrimer's 3, and all sequels/variations.
Trying to remain mostly modern:
Lemmings, Chromadrome, Troddlers, Professor Fizzwizzle (though I've yet to be hooked but I see the potential), Bridge Builder/Pontifex (I'm glad I thought of that one - a puzzle game which actually teaches something is a masterpiece in its own right), Dave the worm (optimised timings seem weird though), Enigma, Fools Gold, Gruntz (under-rated - 100% is *hard*), Marble Blast (yes, arcady but requires intelligence similar to problem solving), Vikings series (cute/fun).
And finally, the one and only... Supaplex
Took me just over 10 years to finish the 111 levels. I obviously didn't play every day (at all), but what is more remarkable - a game can be hard enough to take so long, or that a game can keep you enthralled for that long? Supaplex obviously did both for me...
