You can actually break all four.

Originally the room was set up so that, if you cleared the challenge, force arrows would appear around the scroll to draw attention to it, and it would change to indicate a second challenge to break all the mirrors. Over the course of development, we decided to just remove the second challenge and the scripting to call attention to it. But you can still do it.
