I liked Sonic Adventure 2 a lot, having both the Dreamcast and Gamecube versions. The levels were pretty amazing, and the story was pretty good as well.

But my favourite is definitely Sonic Adventure 1. Not because of the gameplay, but because of the poorly constructed levels, meaning things like E-102 into Twinkle Park and Knuckles in Emerald Coast. Those kind of things always impress other people who played it.

Seriously, get a used Genesis and Sonic the Hedgehog 2 and 3 off of Ebay. Also get Sonic & Knuckles. Then you can make a more accurate list.

I love Sonic Rush for the Nintendo DS. It's a good game to play with.

I would have to say that the original Megadrive (Genesis in the US) ones were the best. Sonic 1-3 and Sonic&Knuckles were the ones that really captured my attention. Subsequent ones were just too overcomplicated, seeming to focus more on graphics and storyline than gameplay.
