Sorry been out of town and kind of forgot about this.

Hints:
1. A sergeant first class, with a plan to steal
2. A fisherman, who's going to have something precious stolen from him
3. A "robbed" thief, who plans to steal it back

Mark Wahlberg?

I don't remember his rank in Three Kings, but he's in the army and he steals a bunch of gold.
In The Perfect Storm, he's a fisherman who loses his life
In The Italian Job, he's a robbed thief who steals back the gold from Edward Norton.

If it isn't Mark Wahlberg, its probably George Clooney. The first two are the same (again, it depends on who was the seargent first class in Three Kings), but he's a thief in Ocean's 11 and he "steals" back his wife from Andy Garcia.

My money's on Wahlberg, though.

ok:

A prideful king who can't solve his own problems.
A proud, but somewhat crusty father.
A conceited submarine captain.

I'd guess at Sean Connery

1) First Knight - King Arthur. Or King Richard I in Robin Hood, Prince of Thieves.
2) Indiana Jones and the Last Crusade - Prof Henry Jones
3) The Hunt for Red October - Captain Marko Ramius

No, but one of your films is correct.

I wouldn't say that Arthur and Richard couldn't solve their own problems.

The proud father was also a sailor.

2- ???
3- Captain Tupolev, The Hunt for Red October

You are correct! The second film (actually 2 films) was Pirates of the Caribean II and III in which he plays Bootstrap Bill the Pirate.

Oh, duh! I knew that! Well, I got it anyway.

A psychic guesting on a second rate talk show.
A colonel with a big problem.
An eye witness in the air force.

Okay, it's been two days. Time for some extra details.

A psychic guesting on a second rate talk show making predictions for Valentines Day.
A colonel with a big animal problem.
An "eye witness" turned traitor in the air force.

Okay, one more set of hints then I'll just let this go if people are tapped out on this game.

A psychic guesting on a second rate paranormal talk show making predictions for Valentines Day.
A colonel with a big animal (lizard) problem.
An "eye witness" turned traitor in the air force.
A presidential speech writer trying to "keep up appearances".

I'm actually enjoying this game a lot, but I have no clue what the answer to this one is. I'll guess Kevin Dunn who I've never heard of, but who, according to IMDB, evidently played a colonel in Godzilla. He also played an adviser (though, apparently, not a speech writer) to Nixon in Nixon, and was in Hot Shots Part Deux (possible Air Force part, but as I haven't seen the movie in a long time, I'd be hard pressed to tell you what his role was). The psychic thing, I can't even begin to guess at.

Dunn it is

A psychic guesting on a second rate paranormal talk show making predictions for Valentines Day. - Ghostbusters II - He predicts the end of the world on Valentine's Day.
A colonel with a big animal (lizard) problem. - Godzilla it is.
An "eye witness" turned traitor in the air force. - Hot Shots!: In the flashback, his name on his helmet is "Eye Witness".
A presidential speech writer trying to "keep up appearances". - Dave

He was also Mr. Witwicky on Transformers, but that was so recent I figured I should avoid that.

Alright, how about:
1. A cop with no heart.
2. A casino owner caught between a rock and a hard place.
3. Another cop with an inside track to when crimes will happen.

Okay, I'll make the obvious guess here based on character #1:

Matt Damon in the Bourne series.

However, I don't believe I've seen him as a baseball player or a ghost in any of the movies I've seen him in. (Though, to be honest, there are lots of Damon movies I haven't seen.)

Yeah, I thought of Matt Damon (and coerced his role as a CIA spy or spook in The Good Shepherd into the ghost role) but I couldn't find a baseball player anywhere.

Yes. Although, in The Pelican Brief, she's a law student. I had Conspiracy Theory in mind.

when I see that list, I immediately think of Rip Torn from Welcome to Mooseport (#2) and Defending Your Life (#3), but I cannot figure out from his imdb page if any of his roles fit #1.
