Just monitor your usual speaking levels before actually recording, adjust your recording level accordingly (and lower it some more for headroom) then up the volume in your audio software after recording if neccessary... (actually, I've found using MP3Gain, vorbisgain or Foobar2000's replaygain scanner quite useful in getting similar volume out of recordings...)
Unless you've got an 8-bit soundcard getting recordings that are a bit quiet is much less of a problem than a recording that's clipping.
