You're not on any kind of time limit. There are only 12 roaches to deal with each spawn cycle. Keep your sword facing N, W, or NW, and kill a few roaches at a time, then walk along the trap doors a little bit. I cleared them from the SE corner to the NW, working my way back and forth along the rows. You probably don't want to get caught in a "hallway" so don't backtrack towards the brain.
