I'm curious as to what benefits a high parrying skill will bring. Will it allow you to parry attacks faster or use less stamina in doing so or something like that? Or is it just a matter of a skill-check to determine if the attack of a certain enemy can be parried at all?

The latter. Parrying is not automatically successful, and attacks from certain enemies (e.g. bergrisi) are harder to parry than from others (e.g. brigands).
