Perhaps I am missing something about the mechanics of the caber, but it seems like the evil eye triggering in the attached demo is a bug.
I tried doing to do the same thing with the rightmost evil eye, and this time it did not trigger.

Not a bug, just a slightly unintuitive result of the turn structure. Evil eyes check their LoS during their movement step, which happens after pressure plates are triggered (i.e. your movement step), but before pressure plates are released (which happens during the end-of-turn cleanup phase). As a result, there's a point where the second plate has gone down but the first hasn't gone up yet, and this is when the eye checks LoS and is triggered. Pretty sure it's covered in one of the Advanced Concepts holds.

Oh, in that case I apologize. Although it does make the room quite difficult because you need to pay attention to the movement order of the eyes (you cannot trigger the rightmost eye of the three with another one of the three).
