After visiting a room, if you reenter the room and make an undo move, a custom monster may lose its custom color, and become the default color for that monster type.

It only seems to affect a single type of custom monster. Even if you make a different custom monster with identical scripting (besides a different name), this bug will only affect one of the monster types.

Unfortunately, the attached example hold does not recreate the issue for me. Undoing on both sides of the room does not cause the color information to be lost.

Are you on Windows or Mac?

I've investigated this further, and I've figured out that the problem was with something else besides the game.I don't think you should worry about this any more.
