I've tried everything that came to mind to try to solve this but I can't seem to be able to make the roaches press the last two pressure plates (from the left).
Any suggestions/demos?

Roaches have vertical preference, so if they are blocked diagonally, they will prefer a vertical move and will only move horizontally if vertical is also blocked.

Because the arrows in this room are in columns, you can't block the vertical move while the roach is off the arrows -- you have to activate the arrows so that the roach is on them.
