I'm using challenges as one way to measure my progress through The Descent of King Hesper, and it's rather tedious to count them when there are so many. Could we have a simple "Completed/Total" score shown on the challenge list screen?

Sure, done. Note that it only shows challenges that have been verified as completed by at least one person, so what you're tracking is how far behind the furthest players you are, not how close you are to done.
