Here is a big update :
The most blue doors: Level 4 which has 10.
The most green doors: level 20, which has 31.Level 15 has the most red doors.Level with most staircases is 12 (7). level with most stairspaces is 24 with 136.
Level 13 has the most non-required rooms.(25)
Level 5 has the most required rooms. (21)
Here is a guess: level 9 has the most doors.

Level 9 has the most Roaches.(535)
Level 21 has the most Roach Queens.(135)
Level 5 has the most Evil Eyes.(476)

Level 8 has the most Tar Babies. (184)
Level 17 has the most Tar Mama's(sets of 2 eyes).(12)
Level 4 has the most Mimics.(31)
Level 10 has the most Spiders.(78)
Level 14 has the most Goblins.(73)
Level 12 has the most Serpents(not serpent spaces).(49)
Level 21 has the most Brains.(70)
Level 25 has the most 'Neathers.(12)

Level 13 has the less number of monsters (1), The less number of green doors(1). I know it's extremely obvious

I think level 20 has the most of crumbly walls (that's less obvious)

I think Level 25 has the least number of accessible rooms from the start (you always get stuck on force arrows and can't go back), and the most demanding order of which you play the rooms.
