Ok, what I found on this room is that Stalwarts work decently with roaches, and abysmally with goblins. You'll of course need one monster to kill the snake.

×the goblin just doesn't work, so use a roach
So I:

×killed off all but one roach and then lured it into the snake pit
of course the real trick is

×separating the roach and the goblin. I did this down at the bottom of the screen by using my sword to manipulate the goblin and then the tunnels so that the goblin was attracted to me but the roach was attracted north to the stalwart
also, he's clearly going to have to kill the goblin, so you'll need to help him out as much as possible.

×keep the goblin focused on you near the south end of the room, and the stalwart can sneak up behind him
oh, in answer to your more general question, I found that the best way to was to take as much of the decision out of their hands. Figure out what they're going to do without monsters and worry about getting the monsters to them.
