The field was present in Wait until var just like Set var, but its use is not to type out the variable name (you select it from the list below), and instead it's for adding/removing variables.
In Set var there is a Add/Remove button, but it's not present in Wait until var, so this field becomes cosmetic.

Suggested change:
Either add the Add/Remove button just like Set var, or remove the Variable Name/Text field.

Variable Name/Text, as the name states, is used for Text. In case of "Wait until var" it is used along with the "Equals text" condition.

All the same, throughout a long while of doing scripting I've often found it very annoying that I couldn't add variables through the "Wait until variable" field and had to go to the "Set variable" one. But that's a feature request, not a bug.
